ChefTop™ is the ideal oven for banqueting.
In the electric or gas GN 1/1 size, the Combi provides extraordinary versatility and a compact size making the oven extremely portable and versatile.
ChefTop™ adapts to every need with simplicity, storing cooking and regeneration processes in order to make them repeatable, regardless of load conditions.

  • Roast

    Thanks to DRY.Maxi flavours are preserved intact, cooking times are decreased and weight loss limited to a minimum.

  • Grill

    Using a FAKIRO Grill plate makes grilling fast and easy, there is no need for supervision by the chef: ChefTouch technology keeps the cooking process under control always delivering, a desired result.

  • Steam

    With STEAM.Maxi it is possible to steam any kind of food quickly and effectively, even using the same oven chamber to steam different kinds of food simultaneously.

  • Slow cooking

    Accurate temperature control allows for more delicate cooking with confidence, ensuring the control of weight loss and an increase in flavour and tenderness.

  • Sous-Vide cooking

    STEAM.Maxi contols with precision the creation of a humidified Sous-Vide environment using accurately controlled steam temperatures, from an initial temperature of 48°C the humidified chamber can be perfectly controlled creating the potential to cook under vacuum with no need of supervision from the chef.

  • Night cooking

    Accurate temperature control and post bake holding features allows the user to maximise benefit by night roasting or slow cooking overnight. This can be achieved without external supervision thereby releasing the oven for times of service. The oven will be working for you during the whole 24 hours, containing costs, increasing yields without increasing your equipment budget.

  • Regenerate

    ADAPTIVE.Clima sensor technology accurately controls the real humidity inside the cooking chamber, allowing precise regeneration that won’t leave any residual humidity on the plate.

  • Cook Lasagne

    AIR.Maxi technology delivers a large heat transmission, cooking time reduction and total evenness even at full load conditions.

  • Bread baking

    AIR.Maxi technology creates a maximum baking uniformity permitting the user to bake any type of bread.

  • Restaurant dessert cooking

    DRY.Maxi technology extracts humidity from raw dough creating and enhancing the formation of a soft and dense internal structure, increasing flavour and promoting an excellent finish in the product.
