With STEAM.Maxi it is possible to steam any kind of food quickly and effectively, even using the same oven chamber to steam different kinds of food simultaneously.
Accurate temperature control allows for more delicate cooking with confidence, ensuring the control of weight loss and an increase in flavour and tenderness.
STEAM.Maxi contols with precision the creation of a humidified Sous-Vide environment using accurately controlled steam temperatures, from an initial temperature of 48°C the humidified chamber can be perfectly controlled creating the potential to cook under vacuum with no need of supervision from the chef.
Accurate temperature control and post bake holding features allows the user to maximise benefit by night roasting or slow cooking overnight. This can be achieved without external supervision thereby releasing the oven for times of service. The oven will be working for you during the whole 24 hours, containing costs, increasing yields without increasing your equipment budget.

SpidoCook™ plate is fast and simple to use for banqueting. The plates and glass-ceramic fry tops evenly cook meat, fish and vegetables. The flavors remain intact even if they are grilled in a sequence of different foods. The contemporary use of two cooking systems, contact or infrared, allows the user to use all the cooking surfaces and to quickly grill any kind of food.
