  • Cook sous-vide

    STEAM.Maxi precisely contols the creation of a humid sous-vide environment. The temperature of the steam can be accurately set starting from 48°C, thus creating the potential to cook sous-vide with no need for supervision from the chef.

    Accurate temperature control and post bake holding features allow the user to maximise benefits by roasting or slow cooking overnight. This can be achieved without external supervision thereby releasing the oven for times of service. The SpidoCook™ plate is fast and simple to use for banqueting. The plates and glass-ceramic fry tops evenly cook meat, fish and vegetables. The flavours remain intact even if they are grilled in a sequence of different foods. The contemporary use of two cooking systems, contact or infrared, allows the user to use all the cooking surfaces and to quickly grill any kind of food.

    Our patented glass ceramic cooking surfaces are partially transparent, allowing fast action infrared rays to reach the core of the product, reducing cooking times while maintaining flavours.
    Toasted sandwiches, paninis and focaccia are crispy on the outside and either warmed or melted inside.
