Main responsibilities
The project will be structured according to the following activities:
Food characterization
Selection and chemical and physical characterization of food products eligible for cooking standards
Identification of organoleptic characteristics of interest
Characterization of cooking behavior by varying the oven's physical parameters
Analysis protocol development
Definition of organoleptic KPIs, target values, measurement and analysis tools
Mechanical tests for texture analysis
Color analysis
Statistical validity
Protocol validation
Panel test – instrument data vs. sensory perception
Evaluation of test sensitivity to multiple oven hardware and software variables
Requirements
University student in Physics or Engineering
Theory of mechanical testing of materials (compression testing, concepts of mechanical strength, elasticity, viscoelasticity, fracture)
Basic concepts of chemistry, physics, thermodynamics, and statistics
Aptitude for experimental work
Knowledge of Excel for data analysis
