For Dominic Quirke, Chef and Owner of Pickles Restaurant, travel to Asia, his British origins and 6 years experience in the kitchen have inspired a fusion cuisine that is both sought after and precise, through a constant search for products that have been carefully selected for their seasonality but also for their authentic local origin. The menu is based on local produce cooked in the French culinary tradition combined with flavors and textures from around the world, including Asia, Italy, North Africa and, of course, the British Isles.
Exceptional products, tasty, sometimes unknown, often ancient breeds or vegetables, reared or cultivated by enthusiasts at affordable prices. It took Dominic months to find these farmers, gardeners, fishermen, cheesemakers, bakers, who produce the best organic products, at the right time, without rushing nature.

He started in the industry as a chef's assistant for 6 years in Newcastle to pay for his studies. Then after 14 years of IT consulting in London and Paris he decided to live his passion for cooking. If the goal had always been to open his own restaurant, he developed his personal style over several years, creating refined and elegant meat and fish dishes.
Dominic has had the chance to work for several renowned and talented chefs (Jerome Banctel Gilles Choukroun, Inaki Aizpitarte, Julien Burlat, Rigothier Pierre Laurent Audiot Philippe Cocardon), and collaborations with the Omnivore team allowed him to work with young chefs worldwide, further reinforcing his fusion style.
