(step 1) 15 minutes - 220°C - 100% dry - fan 4 
(step 2): probe 40°C - 86°C - 50% dry - fan 2
(step 3) probe 52°C - 96°C - 50% dry - fan 2 

PRECOOKING RADICCHIO (sous-vide)
5 minutes - 100°C - 100% steam - fan 4 

GRILLED VEGETABLES
230°C - 100% dry - fan 4
courgettes 10 minutes
radicchio 4 minutes
aubergines 6 minutes

PICKLED VEGETABLES (sous-vide)
100°C - 100% steam - fan 4
onions 6 minutes
carrots 8 minutes
