A good professional combi oven must be able to cook evenly on every tray.

Both in a kitchen and in a pastry or bakery laboratory, it is essential to optimise time and space. A combi oven guarantees impeccable cooking results in all conditions, thus avoiding wasting labour, consuming less energy and increasing productivity. CHEFTOP & BAKERTOP MIND.Maps PLUS ovens provide vertical and horizontal uniformity. Vertical uniformity means that the development and the colour of the food are homogeneous from the first baking tray at the top of the oven to the very last tray at the bottom. A combi steam oven provides horizontal uniformity when all the products are cooked and developed in the same way on the entire surface of each tray, without having more cooked areas or portions of food.

A good professional combi oven is connected and intelligent.

A combi steam oven must be intelligent. It must be able to recognise the critical points of each cooking process: if too much time has passed with the door open during the cooking, if we have introduced more or less trays of food with respect to the previous cooking or what is the most suitable washing program depending on the amount of dirt inside the cooking chamber. The oven is intelligent because it does not work passively, but actively intervenes by making corrections and optimizing the program, even while it is running. 

A professional Unox combi oven also uses Artificial Intelligence to measure the cooking performance and the oven usage in general to give you the opportunity to improve its performance. This is called DATA DRIVEN COOKING (DDC).
