Unox Commercial Ovens

Having a commercial oven in a kitchen, a laboratory, a pastry shop or a gastronomy, plays a key role as for both the realization of successful dishes and the adoption of a more profitable working method that increases quality and profit. Convection, humidity and convection or combi oven: which one to choose?

The convection oven is equipped with one or more fans (that is why it is also called ventilated oven) and uses the hot air circulating inside it to cook food. Thanks to the convection movement, heat is evenly distributed in the air and therefore the cooking of food is homogeneous. A professional convection oven is suitable for baking frozen bakery, pastry products or simple products such as shortcrust pastry, which do not require special climatic conditions during the baking process.

The convection oven with humidity has the same characteristics as a ventilated oven, but with the addition of steam. In this case the elements we are going to check are: time, temperature, air speed and humidity.
The difference between a convection oven with humidity and a combi oven is that the former was created to perform very simple cooking techniques as those explained above taking advantage of the fact that it can handle the addition of steam percentages to speed up the cooking process or to expand the range of products that can be cooked. An example? If we need to bake a fresh croissant that needs precise percentages of humidity during the first part of the cooking, surely the first choice falls on a convection oven with humidity. However, these ovens are not designed to handle cooking processes with high humidity percentages such as steam cooking. A professional convection oven with humidity is suitable for bakery and pastry even fresh, however it may have some limitations while baking certain types of bread or baked goods, which require the use of a combi oven that can saturate the baking chamber with steam in just few seconds.

The combi oven is the maximum expression of a professional oven. It was created to cover all the climatic conditions necessary to complete a cooking process: from steam cooking to grilling. A professional combi oven can cook anything. And it is designed to withstand all conditions. A professional combi oven allows you to choose the percentage of humidity you want to have inside the cooking chamber. Moreover, thanks to some special technologies, Unox intelligent combi ovens can automatically recognize the amount of food baked, the characteristics and climatic conditions in which to operate by automatically adjusting the settings, to ensure the perfect result in every condition.
